November Meal Plan (Gluten-Free & Kid-Friendly)

November 6, 2025 by Claire Leave a Comment

Well hellooooo friends. Somehow Halloween is done and dusted, the stores are full of Christmas decorations and I’m personally not quite ready for the holiday season! Let me have my cold, rainy November days for a few weeks first, please. I kind of love the bare-treed, gloomy-skied, icy aesthetic of this month. It creates a hyggeligt feeling inside 🙂

Anyways, I’m late, but I’m bringing you that autumn (now just November) meal plan I promised back in September. I had the hardest time deciding which recent eats to share in the meal plan, so there are lots more favorite recipes linked down below, too. As always, this is a realistic look at what we eat so not every meal is even from a recipe. But hopefully you can find some new favorites here!… Read More »

July Meal Plan (Gluten-Free & Kid-Friendly)

July 22, 2024 by Claire Leave a Comment

Somehow it’s the last full week of July and let’s just forget eeeeeverything related to American politics at the moment and say I’m so excited for fall! The back-to-school prep and routines, fall foods, fall traditions like apple picking and pumpkin carving, the cooler weather… yes please.

One thing I will miss about summer, however, is our garden. Whilst we will hopefully continue to harvest some foods (squash, a second crop of beans, kale) into the fall, most of it dies back in the first cold snap. We’ve definitely been taking advantage of the fresh produce in our daily meals lately.… Read More »

The (Updated) Twin Cities GF Restaurant Guide

October 4, 2023 by Claire Leave a Comment

One good thing about this week: this gorgeous gluten-free pie my mom and I made last weekend that was incredibly delicious!

Hello friends, we are having one heckuva week with a nap-fighting baby and a surprise trip to the ER yesterday (don’t worry… everyone’s fine… allergic, but fine). Hence, no new posts to share!

I did update our Twin Cities Gluten-Free Restaurant Guide the other day as it was pretty outdated–written over four years ago, and there have been lots of changes to our local restaurant scene since then. It gets a fair bit of traffic, so it needed to be revisited! I’d love to know any of your recommendations in the comments too, as I’m always looking to expand the circle of places that Eric, and other celiac blog readers, can safely eat.

Hopefully there will be no more surprise medical issues this week and I’ll be back on Friday with our Life Lately!

xx Claire

January Week Meal Plan

January 13, 2023 by Claire Leave a Comment

Last month I posted a winter’s week meal plan for fun and it was unexpectedly quite a popular blog post! So today I’m back with another example, a real life January meal plan for one week–healthy-ish and delicious (and with a lazy parents’ no cook night, too!).

As always, everything is gluten-free due to Eric’s celiac disease. We are also trialing eliminating dairy again for one of the kids so almost everything is adaptable to dairy-free.… Read More »

15 Ways to Use Rotisserie Chicken for an Easy Dinner

December 23, 2022 by Claire Leave a Comment

My family never bought rotisserie chickens growing up. My mom (well, both my parents really) is an incredible cook and would make a roast chicken, roasted potatoes and steamed vegetables from scratch every weekend.

And while I would love to be the perfect housewife who has a whole roast dinner on the table promptly at 5pm every Sunday, well… in this stage of life with three under four… it’s not happening. Enter: the humble rotisserie chicken, which is the base for a wholeee bunch of our meals lately! Even a small bird has quite a bit of meat, so we usually make two chicken-based dinners and then also have leftovers for 1-2 lunches during the week. … Read More »
