Hello, world! I’m still here and wanting to blog, just totally swamped with work, wedding planning, holiday prep and getting ready to travel for the holidays!
Today I thought I’d just share a brief life update. And, wish you a merry Christmas (if you celebrate) and happy 2018 kickoff, in case I don’t get to write again until after the holidays! I’m really hoping to, but we shall see!
Baking lately: Christmas cookies for our friend gift boxes. This year we made two-ingredient chocolate fudge, peanut butter balls (a family recipe), and gluten-free sugar cookies and ginger wafers. Everything turned out great! And we had a blast decorating sugar cookies with a friend last week 🙂
Favorite recipe lately: We’re currently obsessed with this baked sweet potato fry recipe. I keep telling Eric that I can’t remember the last time vegetables tasted so good.
Wrapping lately: All of Eric’s family’s gifts. We had a looong wrapping session last night! Now we’re pretty much done, with the exception of one gift that should be arriving today. Next year I want to do more (mostly) homemade and charitable gifts, but with wedding craziness hanging over our heads, I’m just glad we got everything done.
Family lately: Last week, my stepmom was in town for a conference. We grabbed dinner with her at our favorite (amazingly GF-friendly) Italian restaurant and the food was phenomenal. Five stars from me! Check out this salted chocolate pudding I had for dessert… swoon.
Wedding prep lately: Designing our save-the-date’s and–a real pain–getting everyone’s address! You’d think it wouldn’t be too hard to just send me an address. I want to invite you to enjoy good food and cake for free! Sigh.
Reading lately: I just finished The Little Book of Hygge, which I totally loved. Now I’m working on The In-Between, a recommendation from Megan. A friend also gave me The Princess Bride for my birthday and another gave me Cold Tangerines. So, I’ve definitely got my holiday reading cut out for me!
Travel lately: This Saturday we’ll be driving down to Arizona to spend a few days celebrating Christmas with Eric’s dad’s family. We’ll stay on a ranch and have the whole thing to ourselves, which should be fun. (Eric’s dad’s side of the family is 38 people and 36 are coming, so we’re not exactly a small group.)
Then we’ll be headed back to work for a brief day before flying to Minnesota for New Years next Friday. We’ll celebrate Christmas with my mom and sister, my dad and stepmom, and my mom’s whole family (who always celebrates Christmas on New Years Day). We’ve also got a double date planned with friends, another premarital counseling session and a little New Years Eve party with some family friends so I’m pretty excited!
How are you celebrating the holidays? Traveling or hanging around home, with lots of family and friends or just a small group? I actually prefer Christmas to be a quiet, homey holiday. Growing up, I usually just spent Christmas Eve and most of the day with my immediate family at home in MN. But, such is the nature of getting married–we don’t get to be with my family every year!
