Hello there! No long post today, but I thought I’d drop by and let you know where I’ve been for the past couple of weeks… sick. A couple of weeks ago I came down with a sore throat and got more and more fatigued as the week went on. Well, I finally went in to see a doctor last week and as it turns out, I have strep. I was prescribed antibiotics, but they had me feeling pretty nauseous for the first few days, so I didn’t get much done.
Luckily, I’m feeling better–although not completely recovered–and I’m ready to check some things off of my to-do list! First off, since it’s been a little while and I haven’t been very active on social media, either, let’s chat about life lately.
Green living lately: Our patio garden finally took off! We’ve got plenty of tomatoes on the vine, fresh herbs, and the strawberries and green beans are blooming.
Eating lately: Recipes from Deborah Madison’s The New Vegetarian Cooking for Everyone! My mom bought it for me years ago, but I’ve only recently started using it. (Most of the recipes are a bit more involved than what one would cook in a college dorm!) It’s got so many wonderful, naturally gluten-free recipes! We’ve made frittatas, leek soup, and I’ve put a tasty-looking fritter recipe on the meal plan for this week. Making more complicated dishes has reminded me how much I really, truly, thoroughly enjoy cooking.
Weekend-ing lately: Well, we planned to visit Yosemite last weekend, but between Eric’s pulled hamstring and my infection, that was a no-go. Instead, we kicked off the weekend with a grain-free frozen pizza on Friday night and I spent most of Saturday and Sunday lying in bed, rereading The Lord of the Rings. Gosh, I love those books! It’s my fifth time reading the series and I’m just as drawn into the story as I was the first time. Reading them is always like coming home.
Wedding planning lately: Nothing. Nada. Zilch. Before I got sick, I booked our gluten-free cake tasting for our Thanksgiving trip home, but I haven’t touched a thing since then.
While I’ve been fatigued and bored lately: I’ve been watching these videos on YouTube. Ummm, where can I get those skills?! How cool would it be to be able to survive in the wilderness for a week with literally nothing? Although, I’m not sure how he made it through the day without eating anything on Day 1… I’d be a hungry, angry mess by the end of the week.
Other fun things I did while sick: sleep until after 9am every day, lots of creative writing, finish Foodist (thanks for the recommendation, Megan!), Skype family, and write some blog posts that I plan to post in the next couple of weeks. It’s been a slow couple of weeks!
